Reduce Waste and Save Money During the Holidays

I’m very passionate when it comes to conservation and I love to reduce, reuse, and recycle as much as possible. That’s because I used to run this company which I founded in 1993 when I was 26 years old.

Now, decades later, when I give holiday gifts I follow this ethos by keeping it simple, yet special. I place my homemade cookies and candy in reusable tins which I purchase at the thrift store. I carefully scrub and de-glutenize the tins, then run them through the dishwasher. This reduces waste during Christmas, Hanukkah, and other special occasions.

Cold weather means apple pie (or some version thereof) in my house.  Our favorite is this cinnamon-spiked apple tart encased in a pecan crust. Since my boys go gaga for anything involving baked apples, this gluten free apple tart with a high protein, grain free crust doesn’t last long around here.

I love that the boys (and their friends) gobble down a treat high in fiber and other nutrients, with a minute amount of added sweetener –this entire dessert has a mere one tablespoon of honey. While super kid-friendly, this not-too-sweet tart also makes a gluten free, dairy free dessert that is rich enough to satisfy discerning palates, hence the place it will take on on our Thanksgiving table next month.

In other news, lately I’ve received a veritable deluge of substitution questions. I wish I had the time to try every permutation of every recipe, with every ingredient! However, unfortunately, I do not. The only way I can know if a recipe will work with the substitution of a different ingredient is to test it. I don’t know the answers intuitively, although it seems like I should! That’s the fun of recipe creation, the only way to know if something works is to test it for yourself.

I often test the recipes that I post on this site a dozen times, sometimes more. After I perfect them I pay someone else to test them again, to make sure they work for someone other than me! You get the idea. It is a long process to make a recipe for you, and I do it for no charge. So please, understand that I cannot test your substitution questions, nor can I afford to provide nutrition information for free recipes. If you’d like that, check out My Fitness Pal. And please be sure if you try a new formula to stop back by and leave a comment on the recipe you re-jiggered to let us know if it worked!

I did in fact, test this Paleo Pumpkin Cranberry Granola recipe a couple of different ways and I can report that it is fantastic with anywhere from 2 to 4 tablespoons of honey. Adjust the amount of this sweetener according to your palate. If you’re craving a crunchy, healthy snack you’ll love it! I also tested it with both freshly baked and canned pumpkin. I prefer it with the freshly baked, but it still tastes quite nice with the canned pumpkin.

Please note, to make this recipe you will either need 3 mini donut pans, or you will need to bake the bagels in 3 separate batches.

This mini bagel recipe is basically the bagel recipe from my latest book, Paleo Cooking from Elana’s Pantry made into little bagels and smothered in the delightful toppings of poppy seeds, sesame seeds, and onion flakes, it was my boys who asked for an everything bagel –i.e., a bagel with a couple of toppings. I use a mini donut pan to make these and I pipe them into that pan with a pastry bag.

My nut-free Paleo Pumpkin Bars are super easy to throw together and fabulous for your Halloween and Thanksgiving celebrations. We love them so much that we make them all year round. That’s because I’m a total pumpkin-a-holic!

I love all things pumpkin and squash, including these velvety nut-free Paleo Pumpkin Bars. Baking with the odd shaped, brightly colored vegetables known as winter squash is one of my favorite things! Pumpkin itself is a type of winter squash, and I use a variety of winter squash in my pumpkin recipes.

For these Paleo Pumpkin Bars I chose roasted acorn squash. You could just as easily select sugar pumpkin, a smaller, denser, tastier version of the more ubiquitous pumpkins used for jack-o’-lanterns. These Paleo Pumpkin Bars would also be great with other types of squash such as kabocha, butternut, buttercup, carnival, or delicata.

If you’re wondering how to choose a winter squash or pumpkin, look for deep saturated colors and make sure the skin is thick and clean. You don’t want to buy winter squash with dents, scuffs or cracks. Finally, check that the squash has a hard, cork-like stem.

I am often asked if canned pumpkin will work in my pumpkin recipes. For these Paleo Pumpkin Bars it will substantially change the recipe and you will need to alter your baking time quite a bit, and possibly make other changes to the recipe as well.
